Peanut Butter Brownie

Gooey Peanut Butter Brownies:

• These brownies are rich, gooey, and perfect for peanut butter fans. They have a swirl of salty peanut butter running through them.
• Ingredients:
  • 250g unsalted butter, cubed
  • 300g dark chocolate (70% cocoa solids), roughly chopped
  • 80g good quality cocoa powder
  • 400g caster sugar
  • 6 large free-range eggs
  • 130g plain flour, sifted
  • 200g crunchy peanut butter
• Instructions:
  1. Heat the oven to 200°C (180°C fan/gas 6).
  2. Melt the butter and chocolate in a small saucepan over low heat. Remove from heat, sift in the cocoa powder, and beat together until smooth.
  3. In a large mixing bowl, whisk the sugar and eggs until pale and creamy.
  4. Add the chocolate mixture and fold together until smooth.
  5. Fold in the flour.
  6. Pour the batter into a greased and lined 20cm x 30cm brownie tin.
  7. Dot over the peanut butter and roughly swirl it together with a spatula.
  8. Bake for 15-20 minutes until the top has a light crust but the center still wobbles.

  1. Melt the butter and dark chocolate together.
  2. Beat the eggs and sugar until pale and creamy.
  3. Fold in the melted chocolate mixture, flour, and cocoa powder.
  4. Add chocolate chips and peanut butter cups.
  5. Pour into a lined baking tin and drizzle melted peanut butter on top. Swirl it slightly.
  6. Bake at 180°C (160°C fan) for 25-30 minutes until set but still fudgy.
  7. Cool before cutting into squares².

  • 1 cup peanut butter
  • 1/2 cup margarine
  • 1 cup white sugar
  • 1 cup brown sugar

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
